HOT SAUCE ( FRANK'S RED HOT) 2 Tbs
DARK CHILI POWDER 2 Tbs
CAJUN SPICE 1 Tbs
GRANULATED GARLIC ½ Tbs
CAYENNE PEPPER ½ Tsp
KOSHER SALT ½ Tsp
BLACK PEPPER ¼ Tsp
1. Place all ingredients in a large mixing bowl.
2. With a wire whip, stir until well mixed.
3. Keep refrigerated.
2. Chicken Numaki | Yield:16 pieces
CHICKEN BREAST 1 Pound
VEGETABLE OIL 1 Tbs
BBQ SPICE RUB 2 Tbs APPLEWOOD SMOKED BACON 8 Slices TOOTHPICKS 16 Each
SHAGBARK HICKORY BBQ ½ Cup
1. Cube the chicken into 1 ounce pieces, marinate chicken in the oil and BBQ Rub for at least 1 hour
2 Cut the slices of bacon I half and wrap one piece around a piece of chicken; Push a toothpick through the side of the chicken to hold the bacon on.
3. Lay out on sheet trays.
4. Bake in a preheated 350 degree oven for 15-25 minutes or until the bacon is crispy
5.Toss the Numaki with the BBQ Sauce and return to the oven for 5-10 minutes or until caramelized
3. Caramelized Bacon | Yield:16 Pieces
EXTRA THICK CUT BACON 16 Slices
SHAGBARK HICKORY SYRUP ¼ Cup
1. Line a sheet tray with a silicon mat
2. Lay the bacon out on the silicon lined sheet tray, and pat dry with a paper towel
3. Brush the Syrup onto the bacon with a pastry brush
4. Cook the bacon in a preheated 350 oven for 15-25 minutes, watching closely.
*There is about 45 seconds between beautify crunch caramelized bacon and burnt bacon.
4. Applie, Brie & Shagbark Crostini | Yield:16 Pieces
GRANNY SMITH APPLES 4 Each
BUTTER 4 Tbs
SHAGBARK HICKORY SYRUP 4 Tbs
KOSHER SALT ¼ Tsp
LEMON JUICE ½ Tsp
BRIE ½ Pound
CROSTINI 16 Each
1. Peel, core and slice the apples
2. Heat a sauté pan over medium flame, melt butter, add apples, toss to coat apples with butter
3. Add salt, lemon juice, and syrup. Cook until slightly caramelized. Remove from heat, reserve
4. While the apples are cooking, cut the brie into thin 1 inch slices and place on the crostini
5. Top the brie crostini with the caramelized apples

CHEF LARRY CLARK'S RECIPES:
Pate de Campagne (Country Pate)
1/2 lb. veal sweetbreads
1/4 lb. chicken liver
1/4 lb. pork tenderloin
1/2 lb. fat back
1/2 cup maderia wine
2 tbsp. Quatre Epices
salt and pepper
Double grind 1st 4 ingredients. Mix together. Combine eggs, wine and seasonings. Blend together evenly. Add to meat mixture. Blend. Melt butter in a small pan and fry a small portion of mixture. Do this to check seasoning of pate. Bake pate in 3 terrine pans or 2 loaf pans. Bake at 375 for 2 hrs. on a tray filled with water. Cool and refrigerate. This makes a coarse pate. It keeps up to 2 weeks.
Bavarois de Rhubarb (Rhubarb Mousse)
1 lb. rhubarb, chopped into one-inch pieces
1 1/2 cups water
1 tbsp. unflavored gelatin
1/2 cup sugar
1 cup whipping cream
Combine rhubarb, water and gelatin in a heavy-bottomed pot and let soften for 5 minutes. Add sugar and bring to a boil. As soon as it boils, remove from heat. Let cool. Refrigerate until thick. Whip cream and fold into gelatin mixture. Refrigerate 2 hours until set. Serves 4-6.
